Whole Roasted Sweet Potatoes

Sweet potatoes are a great source of fiber and vitamins, are low in fat, and tasty prepared either savory or sweet. Roasting them whole is the easiest, no-fuss, simplest way to prepare them. A few suggestions for toppings are butter, cinnamon sugar, caramelized onions, shredded cheese, honey, nuts, maple syrup, and sour cream and chives.

Ingredients

  • 4 sweet potatoes
  • 1 tablespoon vegetable oil
  • 1 teaspoon sea salt

Directions

Step 1
Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper or aluminum foil.

Step 2
Scrub potatoes and pat dry with a paper towel. Prick potatoes with a fork or sharp knife about 5 times. Rub potatoes all over with oil and salt which will crisp the skin while baking. Place on the prepared baking sheet.

Step 3
Bake in the preheated oven until soft inside, about an hour. Test for doneness by gently squeezing with an oven mitt, or pierce with a knife or fork to see if there?s any resistance. If there is, back into the oven for another 10 to 15 minutes (See Cook?s Note below for a cooking time guide).

Step 4
Slice the top of the potato, fluff the inside with a fork, add whatever toppings you like, and serve immediately.

Cook’s Note:

Cooking time depends on the shape and size of your sweet potatoes. If your potatoes are small, up to 2-1/2 inches wide, check for doneness in about 45 minutes. If they?re medium, 2-1/2 to 3 inches in diameter and about 6 to 9 ounces, figure about an hour. If large, about 3 to 3-1/2 inches or 1 pound, allow about an hour and 15 minutes.
