This easy dish was one we often had while camping as kids — my sister and I loved it. Many years later, I was challenged to come up with a dish to take to my sister’s for Christmas brunch. I was inspired and made our camper’s hash. To justify this humble dish’s appearance at Christmas, I called it “Who-Hash,” and a tradition was born. Now we make this Who-hash recipe every Christmas morning. The name of this dish came from a line in Dr. Seuss’ “How the Grinch Stole Christmas” where it is described that the Grinch stole everything in the Whos’ house, even “their last can of Who-hash!”
Ingredients
- 1 tablespoon vegetable oil
- 2 (15 ounce) cans diced white potatoes, drained
- 1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), diced
- ½ medium onion, chopped
Directions
Step 1
Heat oil in a nonstick skillet over medium heat. Spread potatoes and meat in a single layer in the skillet; cook until browned on the bottom, about 5 minutes. Turn potatoes and meat; cook until the other side is browned, about 5 minutes. Add onion; cook and stir until tender, 5 to 7 minutes.
