Ingredients
- 2 tomatoes, cut into chunks
- ½ cucumber – peeled, seeded, and diced
- 1 large ripe nectarine, diced
- 3 tablespoons chopped fresh cilantro
- 1 tablespoon olive oil
- 3 tablespoons crumbled goat cheese
Directions
Step 1
Mix tomatoes, cucumber, nectarine, and cilantro together in a bowl. Stir in olive oil gently. Sprinkle goat cheese over salad.
Cook’s Notes:
You could also drizzle in some good balsamic vinegar with the olive oil.
