There are few things I enjoy more than a fresh salad like this spinach-arugula salad, sweetened with strawberries, and tossed with fresh torn herbs and a tangy, quick-and-easy homemade vinaigrette. You can style up this salad with additions of toasted almonds or pine nuts, or a sprinkle of crumbled feta cheese.
Ingredients
Salad
- 6 cups baby spinach and arugula
- 1/2 cup torn fresh basil leaves
- 1/2 cup talian parsley leaves
- 1/4 small red onion, thinly sliced (optional)
- 1 cup fresh strawberries
Vinaigrette
- 1/4 cup white wine vinegar
- 2 teaspoons ijon mustard
- 2 teaspoons honey
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup olive oil
Directions
Step 1
In a small bowl, whisk vinegar, Dijon, honey, salt, and pepper. Gradually add olive oil and whisk until well blended; set aside. (As an option, If you have a small food processor, blend all dressing ingredients except olive oil until well combined. With motor running, stream in olive oil, and blend until emulsified, about 30 seconds.)
Step 2
In a large bowl, combine spinach and arugula, basil, parsley, and red onion, if using. Fold in strawberries, drizzle with vinaigrette to taste, toss until well combined, and serve.
