Southwestern Breakfast Sliders

These sliders are a modified version of a Western omelet turned into a breakfast sandwich. Tasty served with hot sauce, avocado slices, sour cream, guacamole, and chopped cilantro.

Ingredients

  • 1 teaspoon olive oil
  • 4 large eggs, beaten
  • ¼ cup minced cooked ham
  • 1 tablespoon minced onion
  • 1 tablespoon minced bell pepper
  • salt and freshly ground black pepper to taste
  • 6 slider buns, toasted
  • 3 slices Cheddar cheese (such as Sargento®)
  • 6 tablespoons salsa
  • 6 tablespoons pickled jalapeno peppers

Directions

Step 1
Heat olive oil in a medium skillet over low heat.

Step 2
Combine eggs, ham, onion, bell pepper, salt, and pepper in a bowl. Pour into the hot skillet and scramble egg mixture until cooked, 1 to 2 minutes. Don't overcook or you'll have rubbery eggs.

Step 3
Portion egg mixture evenly amongst the 6 bottom halves of the slider buns, place a slice of Cheddar cheese on top and add salsa and jalape?os. Cover with top halves of the buns and serve warm.

Cook’s Note:

Trader Joe's® Hot & Sweet Jalape?os taste particularly good on these sliders. Feel free to use shredded Cheddar in place of the Cheddar slices. These sliders may be frozen and reheated in the microwave for a quick To-Go breakfast.
