Roasted Grape Flatbread

Pizza dough or a flatbread are topped with ricotta, mozzarella, and roasted grapes and baked in the oven – a delicious appetizer or side.

Ingredients

  • 8 oz pizza dough
  • 4 cups seedless red grapes
  • teaspoons olive oil
  • 1 teaspoon fresh rosemary
  • 1/4 salt
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 black pepper
  • 1 white wine vinegar
  • 2 cups arugula

Directions

Step 1
Preheat the oven to 425 degrees F (220 degrees C). Grease a baking sheet. Unroll pizza dough onto prepared baking sheet. Bake for 6 minutes.

Step 2
Line a 10×15-inch baking pan with foil. Arrange grapes in prepared baking pan. Drizzle with 1 tablespoon oil and sprinkle with 1/2 teaspoon rosemary and 1/4 teaspoon salt; toss to coat.

Step 3
Roast grapes, stirring once halfway through, until slightly charred, about 40 minutes. Remove grapes from baking pan; pour accumulated juices into a small bowl.

Step 4
Meanwhile, stir together ricotta, mozzarella, parsley, pepper, and remaining 1/2 teaspoon rosemary in a small bowl.

Step 5
Spread ricotta mixture onto the parbaked crust. Top with roasted grapes. Bake until cheese is lightly golden, about 10 minutes.

Step 6
Meanwhile, for dressing, whisk together reserved grape-roasting juices, vinegar, and remaining?2 teaspoons oil and 1/8 teaspoon salt in a bowl. Toss watercress with dressing. Top flatbread with dressed greens.

    Found this one in the AllRecipes Magazine. I served it to guests and it went over well. Next time I do think I would add some prosciutto. We all appreciated the novelty of the roasted grapes.

    This was okay. Seemed to be easy, but the recipe as written has some errors. Quantities: You only need 3 cups of grapes. Using a pre-made flatbread is definitely the way to go. Roasting the grapes: 425 is too high. My grapes gave off their juice, which – in the high temperature of the over – burned. BUT after the grapes were taken out of the oven and put into a bowl they rendered a nice amount of juice to be used in the dressing. Overall this was a nice starter, but adjust as needed.
