Parmesan and Bacon Roasted Asparagus

We love roasted asparagus, and sometimes we like to add crispy bacon and shaved Parmesan cheese for a little extra flavor.

Ingredients

  • 4 slices bacon
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1 pound asparagus-washed, trimmed, and dried
  • 1/2 cup shaved Parmesan cheese
  • 1 tablespoon fresh parsley (optional)

Directions

Step 1
Preheat the oven to 400 degrees F (200 degrees C). Line a 12×18-inch sheet pan with parchment paper.

Step 2
Cook bacon in a large non-stick skillet over medium heat, until crisp and brown, about 8 minutes. Remove bacon from the skillet, crumble, and set aside. Reserve 1 tablespoon bacon drippings in the skillet.

Step 3
Add olive oil, minced garlic, salt, paprika, and black pepper to the drippings in the skillet. Cook and stir just until garlic is fragrant, 30 seconds to 1 minute.

Step 4
Add asparagus to the skillet and stir quickly, coating with the seasoned oil. Remove skillet from the heat and spread asparagus in a single layer on the prepared sheet pan.

Step 5
Roast in the preheated oven until crisp-tender, 10 to 12 minutes (see note).

Step 6
Place asparagus on a serving platter and sprinkle with shaved Parmesan. Top with crumbled bacon. Garnish with fresh parsley.

Cook’s Note:

The asparagus used in this recipe was about 1/2-inch in diameter, and it was cooked to a crisp-tender stage. If you prefer softer asparagus, increase the cooking time. Thinner asparagus may not need as much roasting time.
