Ingredients

  • 2 eggs
  • 2 tablespoons salsa
  • 1 slice reduced-fat American cheese
  • 1 tortilla

Directions

Step 1
Spray a cereal bowl with nonstick cooking spray. Crack the eggs into the bowl, add the salsa, and stir. Microwave on high for 1 minute, stir, and cook for another minute or until the mixture firms up.

Step 2
Place the cheese in the center of the tortilla and top it with the egg mixture. Wrap it all up like a burrito and head for the car.

    What a quick way to prepare a meal on the go! However, I don’t think I’d “head to the car” with it, as stated, because this can get messy. The cook time was spot on. The first time I made this it was a fail. I used a regular size tortilla and that wasn’t nearly big enough and everything fell apart. Note that you will have to use a large 10-inch tortilla to get this to work. I made it a second time and everything worked out great, but I added a sprinkle of salt this time and it taste better. The only thing I’d suggest is using a cheddar slice instead of American cheese. I also warmed up my tortilla in the microwave for about 15 seconds prior to rolling everything up.

    This is a great recipe.
    Add whatever you prefer… bacon, ham, shredded cheddar cheese, salsa.
    Make your own homemade tortillas to have in hand.
    If you read the ingredients on many sold in stores, they contain wood pulp cellulose and gums as thickeners.
