This zucchini stir fry with sweet onion, diced tomatoes, and garlic makes for a quick and easy vegetable side dish. Goes great with grilled chicken breast, fish, or pasta. Ever since I have been making it, my husband can eat almost all of it in one sitting!
Ingredients
- 1 tablespoon olive oil
- 1 tablespoon minced garlic
- 1 large sweet onion, thinly sliced
- 2 medium zucchini, halved and sliced
- 1 (14.5 ounce) can diced tomatoes
- 1 pinch Italian seasoning, or to taste
- salt and ground black pepper to taste
Directions
Step 1
Heat oil and garlic in a large skillet or wok over medium heat. Cook and stir onion in hot oil-garlic mixture until onion is almost translucent, about 3 to 5 minutes. Add zucchini; cook and stir until zucchini is slightly crisp, but not mushy, about 10 minutes.
Step 2
Stir in diced tomatoes and cook until heated through. Stir in Italian seasoning, salt, and pepper.
