Zucchini Pizza Bites

These cheesy zucchini pizza bites are an excellent replacement for pizza without the carbs — you won’t even miss the crust! Season with your favorite herbs.

Ingredients

  • 2 zucchini, sliced into 1/4-inch thick rounds
  • 1/4 cup pizza sauce, or more to taste
  • 20 slices pepperoni, or more to taste
  • 1/2 cup shredded mozzarella cheese, or as needed
  • Italian seasoning, dried parsley, or oregano for sprinkling (Optional)

Directions

Step 1
Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.

Step 2
Spread zucchini slices in 1 layer on the prepared baking sheet.

Step 3
Bake in the preheated oven until zucchini is tender, about 15 minutes.

Step 4
Spoon pizza sauce over each zucchini slice and top with pepperoni and mozzarella cheese. Sprinkle herbs over each.

Step 5
Bake in the preheated oven until cheese is melted, about 5 minutes more.

    I used fresh parsley instead of the dry and these were pretty good. I do think they could have benefited from another spoon of pizza sauce over the pepperoni but that is just my opinion. I also added more cheese to one of my “pizza’s” after pulling them from the oven and I liked what that added too. Overall good dish but I plan to play around with it more. Sliced black olives would be a nice touch too.

    I decided to cut it lengthwise because slicing it in rounds would’ve been way too small. This required it to be cooked a little longer because of the thickness. I also added garlic salt and cracked pepper. I only gave it four stars because of you variations I had to do.

    This is a super easy recipe for a quick, yummy dinner, particularly in the summer when the zucchini is so plentiful. I make my homemade pizza sauce and since we are vegetarian, I put finely chopped veggies on top of the sauce and finish it off with a bit of fresh, shredded mozzarella! Absolutely DELICIOUS! Thanks for the great idea :-).
