These zucchini bars are so delicious that my family can eat the entire batch in one day! These snack cakes are very easy and moist.
Ingredients
- 2 cups white sugar
- 1 cup vegetable oil
- 3 large eggs
- 2 teaspoons vanilla extract
- 2 1/3 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- ¼ teaspoon baking powder
- 2 cups grated zucchini
- 2 ½ cups confectioners' sugar, sifted
- ½ cup margarine
- 1 (3 ounce) package cream cheese, room temperature
Directions
Step 1
Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking dish.
Step 2
Mix together sugar, oil, eggs, and vanilla in a large bowl until well blended. Combine flour, baking soda, salt, and baking powder in a separate bowl; stir into sugar mixture until well combined. Mix in zucchini. Spread batter evenly into the prepared baking dish.
Step 3
Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.
Step 4
Blend together confectioners' sugar, margarine, and cream cheese in a medium bowl with an electric mixer until smooth. Spread over warm cake. Allow cake to cool completely before cutting into bars.
