Ingredients

  • 8 vegetarian bacon strips
  • 1 head fresh broccoli, chopped
  • 1 small head cauliflower, chopped
  • 1 ½ cups shredded sharp Cheddar cheese
  • ½ large red onion, chopped
  • 1/3 cup light mayonnaise
  • 1/3 cup plain yogurt
  • ¼ cup red wine vinegar
  • 2 tablespoons white sugar
  • 2 teaspoons ground black pepper
  • 1 teaspoon salt
  • 1 teaspoon fresh lemon juice

Directions

Step 1
Cook bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain fat and crumble bacon.

Step 2
Mix broccoli, cauliflower, Cheddar cheese, onion, and crumbled bacon together in a large bowl.

Step 3
Whisk mayonnaise, yogurt, red wine vinegar, sugar, ground black pepper, salt, and lemon juice in a bowl until thick and creamy. Pour dressing over broccoli mixture and toss to combine. Cover and refrigerate until serving.
