Ingredients

  • 5 tablespoons water
  • 2 tablespoons ground flax seeds
  • ½ cup cane sugar
  • 1/3 cup coconut oil, melted
  • ¼ cup almond milk
  • ¼ cup almond butter
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • ½ cup oats
  • 1/3 cup shredded coconut
  • 3 tablespoons cocoa powder
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup vegan chocolate chips

Directions

Step 1
Preheat oven to 350 degrees F (175 degrees C). Mix water and flax seeds together in a bowl.

Step 2
Mix cane sugar, coconut oil, almond milk, almond butter, and vanilla extract together in a bowl.

Step 3
Mix flour, oats, shredded coconut, cocoa powder, baking soda, baking powder, and salt together in a bowl. Stir in sugar mixture, flax seed mixture, and chocolate chips. Spoon batter onto baking sheets.

Step 4
Bake in the preheated oven until golden brown, 11 to 13 minutes.

Cook’s Note:

Any variety of nut butter can be substituted for the almond butter.
