The Secret to These Crispy Zucchini Fries? Your Air Fryer

Serve these air fryer zucchini fries as a side dish for beef, pork, or chicken, or as an appetizer or snack anytime. They come together in a flash.

Ingredients

  • 2 (8 ounce) zucchini
  • salt as needed
  • 1 large egg, beaten
  • 1/2 cup seasoned bread crumbs
  • 1/4 cup grated Parmesan cheese
  • nonstick cooking spray
  • 1/2 cup marinara sauce for dipping (optional)

Directions

Step 1
Place zucchini fries in a colander. Sprinkle with salt and let sit for 5 minutes. Blot dry with paper towels.

Step 2
Place beaten egg in a shallow bowl. Stir bread crumbs and Parmesan cheese together in a separate shallow bowl.

Step 3
Dip each fry in beaten egg, then dip in breadcrumb mixture to coat. Place fries on a plate.

Step 4
Preheat the air fryer to 400 degrees F (200 degrees C) for 2 minutes.

Step 5
Place fries in the basket of the air fryer in a single layer, working in batches if necessary. Lightly spray the tops with nonstick cooking spray.

Step 6
Cook until browned to your taste, about 8 minutes. Transfer to a plate and repeat with remaining fries.

    Perfect Finger Food!

    These are a healthy alternative to pan or deep frying and stay crispy even when they have cooled off unlike traditional frying method. Love that!!

    Changes I made where: When cutting the fries, I cut off about a 1/8 of an inch of the inside zucchini meat to make them more fry shape and more uniform to cook.

    Also, I have an Emeril French door fryer, so I dropped the temp to 390 for 8 minutes.

    The zucchini fries turned out perfect!!!

    It is the first time I made zucchini fries. I thought the fries were great. The coating went on well for about 8 fries and then it was hard to get the breading to stick. So next time, I will try using flour, then egg wash and finally bread crumbs.
