Ingredients

  • cooking spray
  • ½ pound breakfast sausage
  • 1 small onion, diced
  • ½ cup milk
  • 5 large eggs
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon ground black pepper
  • 1 (12 ounce) package shredded Cheddar cheese, divided
  • 1 (16 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)

Directions

Step 1
Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a 2-quart baking dish with cooking spray.

Step 2
Heat a large skillet over medium-high heat. Cook and stir sausage and onion in the hot skillet until sausage is browned and crumbly, 5 to 7 minutes. Drain and cool.

Step 3
Meanwhile, whisk milk, eggs, onion powder, salt, garlic powder, and pepper together in a bowl.

Step 4
Spread sausage mixture over the bottom of the prepared baking dish. Pour egg mixture over the top. Layer with 1/2 of the Cheddar cheese and all of the potato nuggets. Cover with aluminum foil.

Step 5
Bake in the preheated oven for 40 minutes. Remove foil and sprinkle with the remaining cheese. Bake until melted, about 20 minutes more. Remove from the oven and let stand for 5 minutes before serving.

    It was so easy and so good! It makes a lot, too. I used 6 eggs, just because I?m a Libra and it has to be even, and it turned out perfectly. I used the exact amount of time as stated, in the oven and it was perfect.

    Wonderful breadless breakfast casserole option, but I would add more garlic powder and onion powder. I made a 9×13 to make extra for left overs so I may not have added enough when I doubled but my guys liked it!

    I made this for my husband and boys and they loved everything about it except the onions. They rated this recipe a 4-4.5. In the future, I would up the onion powder and omit the onions. I did need to give it extra cook time but that could be because of my oven. As a Libra, I felt no need to add an extra egg.

    Doubled and then doubled the seasonings. Added a diced red bell pepper when saut?ing the sausage for some color. Might consider a can of green chiles next time. Finally added a layer of cheddar cheese over sausage before adding the tots. We like cheese! Really good! Will make again!

    I used the recipe on this site for “Mom’s Turey Sausage Patties” as the sausage. Increased the onion powder and garlic powder as others suggested. The casserole came out perfectly in the time stated in the directions. Served with muffins for Christmas breakfast. Kid approved.
