Strawberries practically embody spring and summer. But when you can't get your hands on fresh strawberries, you can still feast on strawberry shortcake, chocolate-dipped strawberries, strawberries and cream and more. So, as much as we'd love the opportunity to stroll through a strawberry patch, we're rounding up our favorite strawberry desserts that help you usher in strawberry season using frozen berries, freeze-dried berries, and pots of jam. For the frosting, be sure to thaw and drain the frozen strawberries before whipping them into the frosting, otherwise it will turn out too thin. Some reviewers used the drained liquid to replace the water in the cake batter for yet another punch of strawberry flavor.

It's been a long road and lots of cupcakes tested and tasted along the way. The trick was NOT using puree as I do when making the frosting. Rather, grinding freeze-dried strawberries into a powder brought this cupcake recipe out of my test kitchen and into my recipe box! I am so pleased with the results!"
