Spring Salad with Fennel and Orange

The gorgeous colors of green, bright orange, purple, white, and red make this delicious fennel salad recipe so enticing. The contrast of tart cranberries, sweet citrus, and tangy salad dressing is always a big hit with all of my guests.

Ingredients

Dressing

  • ¼ cup white sugar
  • ¼ cup red wine vinegar
  • 3 tablespoons olive oil
  • 1 tablespoon chopped fresh basil
  • salt and pepper to taste

Salad

  • 1 (10 ounce) bag mixed salad greens
  • 1 medium orange, peeled and broken into sections
  • 1 small fennel bulb, thinly sliced
  • ½ medium red onion, thinly sliced
  • ½ cup slivered almonds
  • ½ cup dried cranberries

Directions

Step 1
Make the dressing: Whisk together sugar, vinegar, oil, basil, salt, and pepper in a small bowl until sugar dissolves.

Step 2
Make the salad: Toss salad greens, orange sections, fennel, onion, almonds, and cranberries together in a large bowl.

Step 3
To serve, pour dressing over salad and toss to combine.
