This pineapple casserole is a staple at all my cookouts and is always a favorite. It’s my grandmother’s recipe that she used to make every Easter. She’s not happy when my extended family calls this “my” recipe, but I always give her credit!
Ingredients
- 1 (20 ounce) can pineapple chunks
- 1 (20 ounce) can crushed pineapple, drained
- 2 cups shredded sharp Cheddar cheese
- ½ cup white sugar, or to taste
- 1/3 cup all-purpose flour
- 40 buttery round crackers (such as Ritz®), crushed
- ½ cup butter, melted, or to taste
Directions
Step 1
Gather all ingredients.
Step 2
Preheat the oven to 350 degrees F (175 degrees C).
Step 3
Drain pineapple chunks, reserving 1/4 cup of the juice. Transfer both chunks and juice into a large bowl.
Step 4
Add drained, crushed pineapple, cheese, sugar, and flour; mix to combine.
Step 5
Pour into a 1 1/2-quart casserole dish.
Step 6
Mix cracker crumbs and melted butter in a small bowl; sprinkle over pineapple mixture.
Step 7
Bake in the preheated oven until golden brown, about 30 minutes.
Tips
You can use pineapple tidbits instead of chunks.
