Slow Cooker Pepper Steak

This pepper steak is our kids’ favorite and super easy in the slow cooker. Serve over potatoes, rice, or noodles

Ingredients

  • 2 pounds beef sirloin, cut into 2-inch strips
  • ½ teaspoon garlic powder
  • 3 tablespoons vegetable oil
  • ½ cup hot water
  • 1 cube beef bouillon
  • 1 tablespoon cornstarch
  • 1 (28 ounce) can stewed tomatoes, with liquid
  • ½ cup chopped onion
  • 3 tablespoons soy sauce
  • 1 teaspoon white sugar
  • 1 large green bell pepper, cut into strips
  • 1 large red bell pepper, cut into strips
  • ground black pepper to taste

Directions

Step 1
Sprinkle beef with garlic powder.

Step 2
Heat oil in a large skillet over medium heat. Add beef strips; cook and stir in batches until browned, 5 to 7 minutes. Transfer to a slow cooker.

Step 3
Stir water and beef bouillon together in a small bowl until dissolved. Add cornstarch and mix to dissolve. Pour mixture into the slow cooker. Stir in tomatoes, onion, soy sauce, and sugar.

Step 4
Cook on Low until flavors blend, about 6 hours, adding bell peppers during the last hour. Season with black pepper.

Cook’s Note:

This can also be cooked on High for 3 to 4 hours.
