Typically cooked on the stove top, this yummy comfort food is straight from the Philippines, but cooked in the slow cooker for ease! Serve over rice.
Ingredients
- 1 pound skinless, boneless chicken breast halves, cut into cubes
- ½ cup soy sauce, or to taste
- ½ cup olive oil, or to taste
- 1 lemon, juiced
- 3 cloves garlic, minced
- ground black pepper to taste
- 2 tomatoes, cubed
- 2 carrots, chopped
- 3 red potatoes, cubed
- 1 onion, sliced (Optional)
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup green peas
Directions
Step 1
Combine chicken, soy sauce, olive oil, lemon juice, garlic, and black pepper in a slow cooker; allow to marinate, 10 to 15 minutes.
Step 2
Mix tomatoes, carrots, red potatoes, onion, green bell pepper, red bell pepper, yellow bell pepper, and peas into chicken mixture.
Step 3
Cook on high for 3 to 4 hours (or on Low for 7 to 8 hours).

I usually cut the vegetables while the chicken is marinating.
