Crispy, golden salmon cakes made with oatmeal, eggs, and canned salmon are fried in a mixture of canola oil and butter. Adjust the amount of onion, oil, and butter to meet your preferences.
Ingredients
- 2 (6 ounce) cans boneless, skinless salmon, drained
- 1 large egg, beaten
- 2 tablespoons chopped onion, or more to taste
- ¾ cup quick-cooking oats, or as needed
- 2 tablespoons canola oil, or to taste
- 1 tablespoon butter
- salt and ground black pepper to taste
Directions
Step 1
Mix salmon, egg, and onion in a bowl with your hands until well combined. Mix in oats, a little at a time, until mixture holds together and is not overly moist. Shape into four patties.
Step 2
Heat oil and butter in a large skillet over medium heat until butter is melted and mixture is hot. Add patties and fry until golden brown on the outside and heated through, about 7 minutes per side.
