Ingredients

  • 2 tablespoons olive oil, divided
  • 2 pints cherry or grape tomatoes
  • salt and pepper to taste
  • 2 garlic cloves, minced
  • 1 tablespoon minced fresh basil

Directions

Step 1
Gather all ingredients.

Step 2
Heat 1 tablespoon olive oil in a 12-inch frying pan over medium-high heat until oil starts to smoke.

Step 3
Add tomatoes to hot oil; season with salt and pepper. Saut?, shaking pan frequently, until tomatoes soften and skins just begin to wrinkle, about 2 minutes.

Step 4
Stir in garlic and continue shaking the pan until garlic is fragrant.

Step 5
Remove from heat; stir in fresh basil and remaining 1 tablespoon olive oil.
