Sausage and pepper burritos with eggs and onions are topped with shredded Cheddar cheese and rolled up in wheat tortillas for a hearty on-the-go breakfast. Top with pico de gallo if desired.

Ingredients

  • 4 links breakfast pork sausage, cut into 1/2-inch pieces
  • ½ cup red bell pepper strips
  • ½ cup green bell pepper strips
  • ½ red onion, sliced
  • 4 eggs, beaten
  • 4 (8 inch) whole wheat tortillas
  • 1 cup Kraft Creamy Melt shredded triple Cheddar with cream cheese

Directions

Step 1
Cook sausage, bell peppers, and onion in a medium nonstick skillet over medium heat until sausage is cooked through and vegetables are crisp-tender, 4 to 5 minutes. Remove from the skillet.

Step 2
Add eggs to the skillet and cook, stirring occasionally, over medium heat until set, about 2 min. Stir in sausage mixture and top with shredded cheese.

Step 3
Spoon onto tortillas. Fold in opposite sides of each tortilla, then roll up burrito-style.

Tips

Reduce the calories and fat of this recipe by preparing with turkey breakfast sausage links, 1 cup of a cholesterol-free egg product, and a low-fat shredded Cheddar cheese.

    Breakfast burritos are awesome and pretty much contain every food group! They can be made ahead of time and are perfect for “on the go”. I swear you could put anything inside a warm tortilla and it’s gonna taste good… You can add pretty much anything you want or have on hand because once you combine scrambled eggs, veggies, breakfast meat and cheese in a warm tortilla you’re in breakfast heaven! All you need is a side of salsa, sour cream, a little tabaso or cholula and you’re all set. Next time I think I’ll opt for a lower fat version and use a combination of eggs and egg beaters, boca breakfast sausage links, and reduced fat cheddar. Definitely hearty so make sure you’re hungry!
