Ingredients
- ½ bunch fresh spinach, minced
- 1 cucumber, cubed
- 1 tomato, cubed
- ½ small red onion, cut into 1/4-inch pieces
- 2 cloves garlic, minced
- 1 lemon, juiced
- ¼ cup olive oil
- 1 teaspoon sea salt
- 1 teaspoon ground black pepper
Directions
Step 1
Mix spinach, cucumber, tomato, red onion, garlic, lemon juice, olive oil, salt, and black pepper in a large bowl. Cover with plastic wrap and refrigerate, 1 hour to overnight.
