Red, White, and Blue Cheese Balls

These might not look like it, but you never want to judge a ball by its cover, because inside we are pairing fire-roasted red pepper, fresh white sweet corn, and blue cheese. Not only is the inside amazing, but these are also getting rolled in all sorts of extra deliciousness which really elevates these.

Over the years, I've created a few "red, white, and blue" recipe videos to honor the Fourth of July holiday. But I think this is the first time the food was actually red, green, and tan. Reminds me of the old joke, "Are you going to believe me or your lying eyes?" Putting aside their external appearance, I couldn't have been happier with how the "red, white, and blue" worked on the inside.

As it turns out, smoky roasted red pepper, sweet, raw, white corn, and sharp, funky blue cheese are a match made in gimmicky holiday recipe heaven. Plus, rolling them in all that extra savoriness (like bacon, nuts, and chives) didn't hurt at all.

These are fairly firm chilled, but with the summer heat, I'm a little concerned someone will serve them outside and end up with cheese sauce. So these should probably stay inside until they're taken out of the fridge and served as an appetizer. You could also just move the whole party inside. Either way, I really do hope you give these a try soon. Enjoy!

Ingredients

For the Coatings

  • ½ cup chopped toasted almonds
  • ½ cup sliced fresh chives
  • 1 cup minced crisp-cooked bacon

For the Cheese Balls

  • 2 (8 ounce) packages cream cheese
  • 3 tablespoons butter, softened
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 pinch cayenne pepper
  • 1 cup diced roasted red peppers
  • 2 cups fresh white corn kernels
  • 4 ounces blue cheese, crumbled

Directions

Step 1
Combine cream cheese, butter, salt, pepper, cayenne, roasted red peppers, corn, and blue cheese in a mixing bowl. Stir together until evenly and thoroughly combined. Cover with plastic wrap and refrigerate until completely chilled, about 1 hour.

Step 2
Use a sorbet scoop or spoon to form tablespoon-sized balls of cheese mixture; place on a lined sheet pan. Cover and refrigerate until firm, about 1 hour. A perfect shape doesn't matter at this point since these will be rolled in the coatings to complete the process.

Step 3
Transfer chilled cheese balls into the coatings of your choice, such as almonds, chives, and bacon, and roll around to cover. Once coated, roll each briefly in your hands to achieve the final ball shape. Transfer to a plate or pan and keep chilled in the refrigerator until ready to serve.

Chef’s Notes:

You can roast the red pepper using a torch or on the stovetop.
