Pork Chops with Stewed Tomatoes

In this recipe, tender pork chops are baked with stewed tomatoes, onions, and mushrooms. This is a great hit with my family — these very easy chops always melt in their mouths!

Ingredients

  • 1 onion
  • 4 thick cut boneless pork chops
  • salt and pepper to taste
  • 10 ounces fresh mushrooms, sliced
  • 1 (14 ounce) can stewed tomatoes, with juice

Directions

Step 1
Preheat the oven to 350 degrees F (175 degrees C).

Step 2
Cut onion into thick slices and arrange them on the bottom of a casserole dish. Lay pork chops over onions. Season chops with salt and pepper to taste.

Step 3
Cover chops with mushrooms and pour stewed tomatoes over all.

Step 4
Bake, covered, for 1 hour. Remove the cover and bake for 30 more minutes.
