This arugula (rocket) salad with pineapple and red onion is perfect for warmer weather. It’s my favorite healthy recipe.
Ingredients
- 4 cups torn arugula leaves
- 1 cup diced fresh pineapple
- ¼ cup chopped fresh cilantro
- ¼ medium red onion, thinly sliced
- 3 tablespoons apple cider vinegar
- 1 tablespoon olive oil
- 2 teaspoons maple syrup
- ¼ teaspoon salt
Directions
Step 1
Mix arugula, pineapple, cilantro, and onion together in a salad bowl.
Step 2
Whisk vinegar, oil, maple syrup, and salt together in a small bowl; pour over salad and toss to coat.
Tips
You can use honey instead of maple syrup if preferred.
