Pimento Salad

This pimento salad is one of my mom Sharon’s specialties. It’s a true Midwest tradition and she even made it for my wedding.

Ingredients

  • 2 1/2 cups crushed pineapple, drained and juice reserved
  • 1 (3-ounce) lime-flavored gelatin mix (such as Jell-O®)
  • 1/2 cup pimentos
  • 1/2 cup grated Cheddar cheese
  • 1/2 cup chopped celery
  • 2 tablespoons green olives, or to taste
  • 1/4 teaspoon salt
  • 1/2 cup whipped cream

Directions

Step 1
Pour pineapple juice into a measuring cup and add enough water to make 2 cups. Transfer into a saucepan and bring to a boil over medium-high heat.

Step 2
Add powdered gelatin mix to a heat-safe mixing bowl. Pour boiling pineapple juice over gelatin and stir until powder is completely dissolved. Allow to cool to room temperature.

Step 3
Combine still liquid Jell-O®, crushed pineapple, pimentos, Cheddar cheese, celery, green olives, and salt in a bowl. Fold in whipped cream. Serve immediately or chill first.
