Ingredients

  • ¼ cup shredded Cheddar cheese
  • 1 large egg, lightly beaten
  • salt and pepper to taste
  • 1 tablespoon vegetable oil
  • ½ teaspoon pesto

Directions

Step 1
Combine Cheddar, egg, salt, and pepper in a small bowl; whisk until well combined.

Step 2
Heat oil in a skillet over medium heat. Pour egg mixture into the skillet; cook and stir until eggs are set, 3 to 5 minutes. Remove from the heat and stir in pesto.
