Serve this simple oven beef stroganoff made with round steak over hot wide noodles. Pair with a Burgundy or Zinfandel wine.
Ingredients
- 5 tablespoons olive oil, divided
- 2 ½ pounds top round steak, cut into thin strips
- 2 cups sliced fresh mushrooms
- 1 large onion, thinly sliced
- 1 clove garlic, smashed
- ¼ cup dry red wine
- ¼ cup tomato paste
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
- 1 bay leaf, crumbled
- ½ cup beef broth
- ½ cup sour cream
Directions
Step 1
Heat a frying pan over medium-high heat. Coat the bottom with 3 tablespoons oil; add steak and cook, turning as needed, until browned, 5 to 7 minutes. Transfer steak to a 3-quart baking dish.
Step 2
Add remaining 2 tablespoons oil to the frying pan. Saut? mushrooms, onion, and garlic in the hot oil until softened, about 5 minutes. Remove from the heat.
Step 3
Add red wine, tomato paste, flour, salt, pepper, and bay leaf to the pan. Whisk in beef broth until well combined, then pour mixture over beef. Cover the baking dish with aluminum foil.
Step 4
Preheat the oven to 350 degrees F (175 degrees C).
Step 5
Bake in the preheated oven until beef is tender, 45 minutes to 1 hour.
Step 6
Gently stir in sour cream and serve.
Tips
Substitute butter for the olive oil and beef consomm? for the broth if desired.
