"I love this recipe," says Dasha Fox-Morrison. "It was a hit in my house, easy to make, and works as a base recipe for other versions."

If caprese is your go-to appetizer, then this should be your go-to breakfast. The eggs bake up beautifully with rich pockets of mozzarella cheese and bold sun-dried tomatoes, all finished with a sprinkling of fresh basil.

Egg white frittatas aren't always big on flavor, but this Mediterranean version packs a punch thanks to sun-dried tomatoes, spinach, and feta.

"This frittata is ready in less than 20 minutes. Take a little bit of leftover breakfast sausage, a few chopped veggies, some shredded cheese, and some eggs, and create a hot breakfast," says recipe creator Bibi.

"My family loves these!" says home cook Angela Altomare. "I've played around with veggies, amounts of cheese, etc. One thing I've found out is that the amount of cheese acts like a binder: If you cut back on the cheese they will sink. If you want to cut back on the cheese, increase 'bulky' veggies, such as adding bits of cauliflower, broccoli, as well as the amount of veggies called for in the recipe."

"An excellent recipe," says Maureen. "Based on preference I changed a few things. I cut the stalk of asparagus into 1 inch pieces and the tips in 2 inch pieces. I cooked them separately in boiling water stalks -3 minutes then add tips 2 more minutes."
