This old-fashioned apple cake with walnuts and coconut is moist and delicious. It’s baked in an angel food cake pan and infused with a warm, sweet glaze.
Ingredients
Glaze
- 1 cup white sugar
- ½ cup buttermilk
- 6 tablespoons unsalted butter
- ½ teaspoon baking soda
Cake
- 3 cups all-purpose flour
- 2 cups white sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 ¼ cups vegetable oil
- ¼ cup orange juice
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup apple – peeled, cored, and chopped
- 1 cup chopped walnuts
- 1 cup flaked coconut
Directions
Step 1
Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 10-inch tube pan.
Step 2
Make the cake: Combine flour, sugar, baking soda, salt, and cinnamon in a bowl. Make a well in the center and pour in oil, orange juice, eggs, and vanilla. Mix until well combined, then stir in apple, walnuts, and coconut. Pour into the prepared pan.
Step 3
Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, 75 to 90 minutes. Remove from the oven and poke holes all over cake with a chopstick.
Step 4
Immediately make the glaze: Bring sugar, buttermilk, butter, and baking soda to a rolling boil.
Step 5
Pour hot glaze over cake and let stand for 1 hour. Carefully turn cake out onto a serving plate.
