This is the best banana nut-oatmeal bread I have ever made! So full of flavor. I double the recipe and give it out as gifts, and everyone seems to appreciate it.
Ingredients
- ½ cup shortening
- ¾ cup white sugar
- 2 large eggs
- 1 cup mashed bananas
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup quick cooking oats
- ½ cup chopped walnuts
Directions
Step 1
Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9×5-inch loaf pan.
Step 2
Cream together shortening and sugar in a large bowl until light and fluffy. Stir in eggs one at a time, beating well with each addition, then stir in banana and vanilla.
Step 3
Sift together flour, baking soda, and salt in a separate bowl. Beat into creamed mixture. Stir in oats and nuts. Pour into prepared pan.
Step 4
Bake in the preheated oven until a toothpick inserted into the center of the loaf comes out clean, 50 to 55 minutes.
