Remove from the heat and cool to room temperature. Cover and refrigerator until well chilled, at least 4 hours.

Step 3
Remove from the refrigerator and add water with ice chunks, apple and onion slices, cinnamon stick, rosemary sprigs, and sage leaves. Stir in remaining 1 cup water and brine is ready to use.

    I picked this recipe because of its name (married to a Matt) haha…..This recipe was easy as far as brine recipes go. I brined my turkey for 11 hours then deep fried it. Flavor was excellent, not overpowering just a great flavor. Bird was juicy and tender and skin was beautiful brown. I will continue to use this one for Thanksgiving!!

    I have fried a number of turkeys and I always brine them before frying. This is by far the best turkey brine I have used. My daughter-in-law told me this was the best turkey she had ever eaten.

    I made this brine per the posted recipe. My fried turkey (13 lbs) came out excellent. The bird was moist and absolutely delicious. My family loved it. I let the turkey sit in the brine for about 15 hours and let it dry for 2 hours before frying it at 350F for 45 minutes.

    I made this and it was fantastic for sure… I’m not a “cook” of any kind. Simple directions for anyone to follow. One thing that did confuse me – directions call for one gallon of water with ice chunks, and then another cup of water.. (?) Any way… Still a very tasty turkey thanks to this brine recipe.

    Awesome brine! One of the best turkeys we’ve had for thanksgiving.

    Had to alter the recipe due to no stock in the area of candied ginger and allspice berries and the conversions can be found on Google.

    Great brine, it offers traditional and complex flavors. This is the 5th time I?ve fried a turkey, first time with this brine and it?s by far my favorite. My old man said it was the best turkey he?s ever had and he?s a fryer naysayer. 12.5 lb bird, 46 min @375
