Mashed Parsnips

Parsnip mash is healthy, flavorful, and slightly sweet with the same great texture as mashed potatoes. I was tricked into trying them, fell instantly in love, and haven’t made mashed potatoes since.

Ingredients

  • 5 cups whole milk
  • 10 parsnips, peeled and cubed
  • 1 teaspoon salt, or more to taste
  • ¼ cup butter
  • 1 teaspoon dried thyme
  • ½ teaspoon ground black pepper, or more to taste

Directions

Step 1
Gather all ingredients.

Step 2
Pour milk into a large pot over medium heat; bring to a simmer. Add parsnips and salt. Cover and cook until parsnips are tender, 25 to 30 minutes.

Step 3
Drain parsnips, reserving warm milk in a separate container.

Step 4
Mash together parsnips, 1 cup reserved warm milk, butter, thyme, and pepper in the same pot using a hand mixer or blender. Add more warm milk until desired consistency is reached. Season with salt and pepper.

Tips

You can cook the parsnips in any type of cream or milk — the heavier the cream, the creamier the result.
