These hearty, Buffalo chicken nachos are bursting with flavor — they’re great any time of the day and are perfect with a frosty cold beverage or two. You’ll love the combination of crunchy tortilla chips, spicy Buffalo chicken, and cool blue cheese dressing. Sharing is optional!
Ingredients
- cooking spray
- ¾ cup blue cheese salad dressing, divided
- ½ cup cayenne pepper sauce (such as Frank's® RedHot®)
- 2 tablespoons butter, melted
- 2 cups shredded cooked chicken
- 1 (13 ounce) package restaurant-style white corn tortilla chips (such as Tostitos®)
- 1 large tomato, seeded and chopped
- ½ cup sliced black olives
- 1/3 cup diced red onion
- ¼ cup pickled jalapeno pepper slices
- 4 ounces precooked bacon, crumbled
- 1 ½ cups shredded Mexican cheese blend
- 1 cup shredded Monterey Jack cheese
- 1 tablespoon chopped fresh cilantro
Directions
Step 1
Preheat the oven to 400 degrees F (200 degrees C). Line a large, rimmed baking sheet with aluminum foil and spray with cooking spray.
Step 2
Combine 1/4 cup blue cheese dressing, cayenne pepper sauce, and melted butter in a bowl until well blended. Add chicken and toss to coat.
Step 3
Spread tortilla chips evenly over the prepared baking sheet. Sprinkle tomato, olives, onion, and jalape?o peppers over chips. Spread chicken mixture over vegetables and top with crumbled bacon.
Step 4
Mix both cheeses together in a bowl; sprinkle mixture evenly over chicken mixture.
Step 5
Bake in the preheated oven until cheese is melted and lightly browned, 10 to 15 minutes.
Step 6
Remove from the oven. Drizzle remaining 1/2 cup blue cheese dressing over nachos and garnish with cilantro.

I recently made this dish and oh my goodness was it a winner with the whole family including my neighbors. I did make changes only because my family is not too fond of blue cheese so I substituted the dressing with ranch since when we eat chicken wings we eat them with ranch. These were such a hit that I made them the very next day and will be making them as an appetizer for Super Bowl. I will be making tons!!!!!! Everyone should at least try this recipe out if you love chicken wings and nachos you will definitely love this recipe!!!! Thank you for sharing this deliciousness with all of us I will definitely continue making these for the whole family and friends.

I made this recipe EXACTLY as written. I, like many others, feel it is unfair to judge a recipe based on YOUR version of it. I would give this five stars, but DH gave it a big thumbs down. And, I had heartburn (which I thought was totally worth it). I probably won’t make this recipe again, because hubby didn’t like it, but seriously, I could probably eat it a couple of times per month!

Everyone loved this. I mixed the chicken with a bit of FF mayo and sour cream and some crumbled blue cheese instead of using the dressing. Eliminated the bacon to save fat calories. Also, no butter and made 1/3 of it using plain corn tortillas instead of tortilla chips. Used ff and reduced fat cheese. Reduced the jalapenos, since my family doesn’t like things too spicy. Disappeared. Will make again.

This was so good. As another mentioned, I substituted blue cheese with ranch and was very pleased. I added fresh jalapenos because I really wanted a fresh kick. The meat was so tasty and it was just enough kick to make your nose run without burning your mouth. I would definitely make this again. It was a real hit at the super bowl party!

This is absolutely the best! I love it because I can customize a section to fit each person’s taste. Now I can finally have all the yummy stuff I usually have to leave out because of the picky kids! Win/win! I add blue cheese to homemade ranch dressing and leave off the cilantro. This can be customized so many ways to suit anyone’s taste. One of our favorite recipes.
