Ingredients

  • 1 pound bacon
  • 2 cups broccoli florets, chopped
  • 2 cups cauliflower florets, chopped
  • 1 carrot, chopped
  • ¼ cup chopped green onions
  • ½ cup mayonnaise
  • ¼ cup distilled white vinegar
  • 1 tablespoon sour cream
  • 1 pinch garlic powder
  • 1 pinch dried basil
  • ¼ cup shredded Cheddar cheese
  • 1 tablespoon chopped fresh cilantro, or to taste

Directions

Step 1
Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Chop and set aside.

Step 2
Combine broccoli, cauliflower, carrot, and green onions in a large bowl.

Step 3
Combine mayonnaise, vinegar, and sour cream in a separate bowl. Beat until smooth. Season with garlic powder and basil.

Step 4
Pour dressing over vegetables and toss to coat evenly. Chill until flavors meld, about 1 hour.

Step 5
Serve salad garnished with Cheddar cheese and cilantro.

Cook’s Note:

Use dried oregano instead of basil if preferred.

    I liked it and will make again. I will use a little less vinegar next time, though. There is no mention about when to add the bacon to the salad; I would recommend adding it just before serving, so that it remains crispy. Personal preference…

    I added 3 tsp Stevia, eliminated carrots and it’s super good!

    I thought it was very good. However I used Hormel bacon bits and saved the step of frying bacon.

    Wonderful recipe. I used bacon bits instead of bacon, half the amount of vinegar, extra garlic powder, basil and cilantro. Recommend adding cheese and bacon when ready to serve.

    This recipe (with a few changes) is in the Summer 2023 magazine. I followed it exactly and really loved it. The magazine calls for using green onions to garnish instead of cilantro and for putting this atop mixed greens. I really like that this recipe omits any sweetener (I really didn?t miss it), adds carrots, and stretches the salad by adding it to mixed greens. Absolutely delicious!
