This cornmeal porridge is a family recipe. The dish makes enough porridge for one hungry adult or two hungry six-year-old kids.
Ingredients
- 1 cup water
- 1/3 cup cornmeal
- ¼ cup whole milk
- ¼ cup coconut milk
- 3 tablespoons white sugar
- ½ teaspoon vanilla extract
- ½ teaspoon salt
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground cinnamon
- 2 tablespoons raisins (Optional)
Directions
Step 1
Combine water, cornmeal, whole milk, coconut milk, white sugar, vanilla extract, salt, nutmeg, and cinnamon in a blender; blend until smooth.
Step 2
Bring mixture to a boil in a saucepan; whisk occasionally until beginning to thicken, about 5 minutes. Reduce heat when slow bubbles form. Stir frequently until as thick as you like, about 5 minutes. Add raisins.
Step 3
Remove from heat, cover, and let cool before serving, about 5 minutes.
Tips
You may also blend cornmeal mixture in a NutriBullet or shake well in a sealed container.
