Ingredients
- 3 medium sweet potatoes, cut into 3/4 inch slices then cubed
- 2 tablespoons cornstarch
- ¼ cup maple syrup
- ¼ cup white sugar
- ¼ cup brown sugar
- 2 tablespoons margarine
- 1 cup water
Directions
Step 1
Toss sweet potatoes with cornstarch in a resealable plastic bag until evenly coated.
Step 2
Place coated sweet potatoes into a multi-functional pressure cooker (such as Instant Pot). Add maple syrup, white sugar, brown sugar, and margarine. Pour in water and stir to combine. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 4 minutes. Allow 10 to 15 minutes for pressure to build.
Step 3
Release pressure carefully using the quick-release method according to the manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
