Instant Pot Beef Stew with Red Wine

Delicious family recipe I was able to make in my electric pressure cooker! I only have a 3-quart Instant Pot so if you have a 6-quart plus, you can double the recipe.

Ingredients

  • 4 tablespoons all-purpose flour
  • 1 ½ tablespoons Italian seasoning
  • 1 ½ tablespoons onion powder
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 ½ pounds beef stew meat, cubed
  • 2 ¾ cups beef broth
  • 1 cup dry red wine
  • 2 tablespoons tomato paste
  • 3 cloves garlic, minced
  • 1 cup chopped red potatoes
  • 1 medium white onion, quartered
  • ½ cup chopped carrots
  • ½ cup chopped celery
  • 2 sprigs fresh rosemary
  • 1 bay leaf
  • ½ (8 ounce) package egg noodles

Directions

Step 1
Combine flour, Italian seasoning, onion powder, salt, and pepper in a gallon-sized resealable plastic bag. Shake to mix seasoning. Add beef to bag, seal, and shake to coat.

Step 2
Select Sear function on a multi-functional electric pressure cooker (such as Instant Pot) according to manufacturer's instructions. Add coated beef cubes and sear until lightly browned on all sides, 7 to 10 minutes. Pour in broth and red wine. Add tomato paste and garlic. Stir in potatoes, onion, carrots, celery, rosemary, and bay leaf.

Step 3
Close and lock the lid. Select Stew setting and set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.

Step 4
Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes.

Step 5
Meanwhile, fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Serve alongside beef stew.

    This was very tasty, and I would make it again. Just a couple of things . . . in step #2, I believe that the setting that you want is “saute” (not sear). Also, you need to add some oil to the pot in order to get the seasoned floured meat to sear (brown). I used about 2 tablespoons of olive oil. My husband thought it was a bit too “herby”, so I’d cut down on the Italian seasoning a bit next time. Overall, a tasty recipe that we enjoyed.

    I only used about 2 1/2 lbs of top round and instead of onion powder i used 1/2 cup of chopped onion. Also I like a lot of potatoes and peeled and chopped 3 large baking potatoes. Otherwise I followed the ingredients as suggested. I also used olive oil to brown the meat and saute the vegetables before adding beef stock. Plus I added peas and pearl onions just because i like them.. The meat was tender and the stew had a rich hearty flavor. This is my new favorite recipe for stew.

    This tasted great but the liquid was too thin. Should have used a slurry with corn starch to thicken it at the end. Also I agree with others. Use the saut? setting to brown the meat and put some oil in the bottom first. I added a parsnip for extra flavor.

    Great recipe and easy to find ingredients. My husband liked it and he is not a stew guy. I would probably add a bit more salt next time. We served it with rice. Even my picky kids were happy with it.

    Very easy to make in InstantPot. Used steak instead of stew meat. Even my father (not a stew person) complimented “It’s good.”; which is a HUGE deal for him.

    The stew was so delicious! We didn?t have bay leaf at the time but I did buy some afterwards and plan on making it again soon, I use normal spiral noodles in it, everyone loved it so much.
