When I went on a six-day kayaking trip, our guides whipped up this breakfast couscous one morning over the campfire. It was delicious, and I started making it at home.
Ingredients
- 2 cups skim milk
- 2 tablespoons honey
- 1 tablespoon ground cinnamon
- 2 cups dry couscous
- ½ cup slivered almonds
- 1/3 cup chopped dried apricots
- 1/3 cup raisins
Directions
Step 1
Combine milk, honey and cinnamon in a saucepan over medium heat. As soon as it comes to a boil, stir in couscous. Turn off heat.
Step 2
Cover and let stand for 5 minutes. Stir in almonds, apricots, and raisins.
