This is my grandma’s old-fashioned blackberry cobbler recipe, and I have found none that compare. I always make it with blackberries, but you can use any fruit you want.
Ingredients
- 3 cups white sugar, divided
- 2 tablespoons cornstarch
- 2 pinches salt, divided
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 cup softened butter
- 1 cup milk
- 2 pounds fresh blackberries
- 2 cups boiling water
Directions
Step 1
Preheat the oven to 350 degrees F (175 degrees C).
Step 2
Whisk 1 1/2 cups sugar, cornstarch, and one pinch salt together in a small bowl.
Step 3
Whisk flour, remaining 1 1/2 cups sugar, baking powder, and remaining pinch salt together in a large bowl. Stir in softened butter until mixture resembles cornmeal, then stir in milk until moistened.
Step 4
Spread blackberries in an even layer in the bottom of a 9×13-inch baking dish; spoon batter evenly over top. Sprinkle sugar-cornstarch mixture over batter, then pour boiling water over top.
Step 5
Bake in the preheated oven until fruit is bubbling and topping is golden brown, 40 to 45 minutes.
