This is one of our favorite recipes for garlic roasted vegetables. Easy to make and very wholesome.
Ingredients
- 1 small head broccoli, cut into florets
- 1 medium red onion, quartered
- 1 medium red potato, thinly sliced
- 1 small red bell pepper, sliced
- 1 small orange bell pepper, sliced
- 8 fresh green beans, halved
- 3 Brussels sprouts, cut into thirds
- 2 medium fresh mushrooms, sliced
- 5 cloves garlic, peeled
- 1 teaspoon ground black pepper
- ½ teaspoon salt, or to taste
- 1/8 teaspoon fresh lemon juice
- 3 tablespoons olive oil, or to taste
Directions
Step 1
Preheat the oven to 450 degrees F (230 degrees C).
Step 2
Place broccoli, onion, potato, bell peppers, onion, green beans, Brussels sprouts, mushrooms, and garlic in a baking dish; add pepper, salt, and lemon juice. Toss with olive oil.
Step 3
Roast in the preheated oven until tender, about 20 minutes, stirring halfway through cooking time.
Cook’s Note:
You can also add some other veggies as you like.
