Fried Zucchini

If you like fried zucchini and squash, and you’re like me, you’re left with only half of what you fried when you get done frying. This is a simple and quick way to fry enough for everyone.

Ingredients

  • 2 zucchini, quartered and sliced
  • 1 onion, sliced into rings
  • ½ cup all-purpose flour
  • ½ cup cornmeal
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon garlic powder
  • 1 cup vegetable oil for frying

Directions

Step 1
Combine zucchini and onion in a large bowl.

Step 2
Mix together flour, cornmeal, salt, pepper, and garlic powder in a small bowl until well combined.

Step 3
Pour flour mixture over zucchini mixture; cover the bowl and shake until vegetables are well coated. Let mixture sit until a batter forms on vegetables, about 30 minutes.

Step 4
Heat oil in a medium skillet over medium heat. Fry vegetables in hot oil until golden brown, turning to cook evenly.
