This recipe for freezer cucumbers makes it easy to enjoy "fresh" cucumbers in the winter. It’s also a great way to use up all those extra cucumbers from the garden!
Ingredients
- 2 large cucumbers, thinly sliced
- 2 tablespoons salt
- 1 ½ cups white sugar
- 1 ½ cups distilled white vinegar
Directions
Step 1
Place cucumbers into a bowl and sprinkle with salt. Cover and refrigerate for 24 hours.
Step 2
Rinse and drain cucumbers, pressing out as much water as possible. Place cucumbers back into the bowl and stir in sugar and vinegar. Cover and refrigerate for another 24 hours. Transfer to a freezer container and freeze.
