This blueberry cake recipe uses fresh blueberries for delicious results! It’s great with confectioners’ sugar or whipped cream on top.
Ingredients
- 2 cups all-purpose flour
- 1 cup white sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 cup blueberries
- 1 teaspoon lemon zest
- 1/3 cup shortening
- ¾ cup milk
- 1 egg
Directions
Step 1
Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan.
Step 2
Sift flour, sugar, baking powder, and salt together in a large bowl. Combine blueberries and lemon zest in another bowl.
Step 3
Beat shortening in a third bowl until creamy. Stir shortening mixture into flour mixture, alternating with milk, then beat until well combined, about 2 minutes. Add egg and beat until incorporated, about 1 minute. Fold in blueberries, then pour batter into the prepared pan.
Step 4
Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 50 minutes.
