Ingredients

  • 2 bunches kale, stemmed and finely chopped
  • 2 carrots, julienned
  • 1 small red onion, minced
  • ½ cup dried cranberries
  • 2 Key limes, juiced
  • 1 lemon, juiced
  • 3 tablespoons mayonnaise
  • 2 tablespoons white sugar
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ground black pepper to taste

Directions

Step 1
Place kale into a large bowl. Add carrots, onion, and cranberries. Toss to mix well.

Step 2
Whisk Key lime juice, lemon juice, mayonnaise, sugar, oil, salt, and pepper together in a separate bowl. Pour over vegetables and mix thoroughly. Refrigerate for 1 hour before serving.
