This fried spinach is a dish that I stumbled across while I was in China and tried to emulate. It’s one of my family’s favorites of all my original recipes. It is simple, requires few ingredients, and is easy and fast.
Ingredients
- ¼ cup unsalted butter
- ¼ cup canola oil
- 2 (10 ounce) bags fresh spinach leaves
- 8 cloves garlic, thinly sliced
Directions
Step 1
Melt butter with oil in a large skillet over medium heat until mixture stops bubbling. (This allows water in the butter to evaporate.) Add garlic; cook and stir until it begins to brown, about 2 minutes. Add spinach; cook and stir until leaves are dark and about 1/4 of their original size, about 5 minutes.
