These buckeye bars are a traditional Ohio treat, made easier here in bar form.
Ingredients
- 2 ½ cups confectioners' sugar
- 2 cups creamy peanut butter
- ½ cup melted margarine
- ½ cup brown sugar
- ½ teaspoon vanilla extract
- 1 (12 ounce) bag chocolate chips
Directions
Step 1
Grease a 10×15-inch jelly roll pan.
Step 2
Mix confectioners' sugar, peanut butter, margarine, brown sugar, and vanilla together in a bowl. Press peanut butter mixture into the prepared pan.
Step 3
Melt chocolate chips in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
Step 4
Pour melted chocolate evenly over peanut butter layer. Let buckeye bars cool completely before cutting into squares.
