This banana bread cake recipe is a family favorite. It is great for using overripe bananas. I usually double the recipe and make 2 loaves. You can also add walnuts if you wish.
Ingredients
- 3 very ripe bananas
- 1 ½ cups all-purpose flour
- 1 cup white sugar
- ¼ cup butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon baking powder
Directions
Step 1
Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9×5-inch loaf pan.
Step 2
Mash bananas in a large bowl. Add flour, sugar, butter, egg, vanilla, baking soda, and baking powder; mix until well combined. Pour into the prepared loaf pan.
Step 3
Bake in the preheated oven until a toothpick inserted into the center of loaf comes out clean, 50 to 60 minutes.
Tips
Place overripe bananas in the freezer until you are ready to use them.
